RECIPE OF THE MONTH FOR JULY!

BLAT LETTUCE WRAPS with fresh fruit, yogurt, & honey

 INGREDIENTS

12 strips of thick sliced bacon

2 avocado cut into medium cubes

 2 medium tomatoes cut into medium cubes

 ¼ medium red onion, cut into small cubes

 1 lime, juiced

 1 Tablespoon olive oil

 ¼ teaspoon kosher salt

 ¼ teaspoon black pepper

 8 whole butter lettuce leaves, rinsed and dried

  4 servings fresh fruit of choice

 2 cups plain Greek yogurt

2 Tablespoons honey

DIRECTIONS

Heat a large, nonstick sauté pan over medium high heat and cook bacon until crisp. Drain on paper towels and crumble into a medium mixing bowl. Add avocado, tomato, onion, lime juice, olive oil and salt & pepper. Stir to combine. Fill lettuce leaves with bacon mixture, roll gently and tuck ends under to close. Serve two per person with fresh fruit topped with ½ cup yogurt drizzled with honey.
